Healthy Raspberry Tart

Crust

1½ cups of cashew halves and pieces
1 cup of raisons
1 tsp vanilla essence
¼ tsp salt
Whizz together in a food processor until it comes together in a ball. Press into either a medium sized flan tin or else three smaller flan tins, and then pop them in the freezer to firm up base.

Filling

1 cup of vanilla or honey flavoured Greek yoghurt
2 packets of raspberries (please note that you can substitute raspberries for any type of berry)
Sprig of fresh mint.
Remove flan tins from freezer, add yoghurt and decorate with washed and dried raspberries. Decorate with mint. Drizzle or sprinkle the raspberries with honey or icing sugar and serve immediately.
